Baking is the cure…

When I get stressed out, I bake. Mainly sweets.

There is just something about making a fresh batch of cookies, or a homemade pecan pie, or in today’s case a peach cobbler that just makes all my worries melt away.

I wanted to share with all of y’all one of my favorite recipes. Now I am sure you can find this recipe all over the internet, but I got it from one of my parent’s closest friends, Ruby. She passed away a few years ago, but every time I make this recipe I always think of her and I know she is smiling down at me from somewhere up above.

Ruby's Peach Cobbler

Ruby’s Peach Cobbler

Ingredients:

1 cup of sugar

1 cup of flour

1 cup of milk

2 teaspoons of baking powder

1 stick of butter

1 can of peaches

 Directions:

Preheat oven to 350 degrees. Melt the stick of butter, then pour it into the bottom of your pan. Next, mix together the sugar, flour, milk, and baking powder. Pour this mixture on top of the butter. Then, last but not least, spoon your peaches over the top. Don’t mix it all together, it won’t turn out well if you do. Put it in the oven for 20-30 minutes or until brown.

Best served with whipped cream or even better, homemade vanilla ice cream!
